Ingredients
- ¼ cup honey
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- ¼ teaspoon kosher salt
- 1 cup quick-cooking oats
- ½ cup unsweetened coconut flakes
- ¾ cup coarsely chopped dried cherries, whole raisins, or mini chocolate chips
- ½ cup creamy almond, peanut, or sunflower butter
How to Make It
- In a medium bowl, stir together the honey, vanilla, cinnamon, salt, and 3 tablespoons hot water. Stir in the oats and coconut and let the mixture sit for 10 minutes. Fold in the cherries and almond butter and stir thoroughly to combine.
- Scoop out the mixture in leveled tablespoons and roll into balls between your palms. Transfer the balls to a plate or rimmed baking sheet and chill for at least 30 minutes before serving. Keep these in an airtight container in the refrigerator for a week or in the freezer for up to 3 months.
