This recipe is sure to be a crowd favourite! If you use frozen berries rather than fresh ones, make sure that you let them thaw completely before topping your pizza.
Ingredients
Brownie Base
- 50 g ground almonds
- 45 g plain flour
- 2½ tablespoons cornflour
- 1 egg
- 2½ tablespoons raw cacao powder
- 2½ tablespoons coconut sugar
- ½ teaspoon baking powder
- ½ cup (125 ml) milk of choice
- 1 teaspoon coconut oil, melted
Topping
- 120 g low-fat cream cheese
- 125 g low-fat plain Greek-style yoghurt
- ½ teaspoon pure vanilla extract
- Strawberries, hulled and sliced, to serve
- Raspberries, to serve
- Coconut flakes, to serve
- Mint leaves, to serve
How to Make It
- Preheat the oven to 180°C (160°C fan/gas 4) and line a pizza tray with baking paper.
- To make the brownie base, place the ground almonds, flour and cornflour in a mixing bowl and stir until well combined. Add the egg, cacao powder, coconut sugar, baking powder and milk and stir until well combined.
- Pour the mixture into the centre of the lined tray and bake in the oven for 10 minutes. Brush with the coconut oil and bake for a further 5 minutes. Set aside to cool slightly.
- Meanwhile, to make the topping, place the cream cheese, yoghurt and vanilla in a bowl and stir until well combined. Spread onto the brownie base using a spatula.
- To serve, top with the strawberries, raspberries, coconut flakes and mint. Cut the pizza into smaller pieces using a sharp knife.
