Ingredients
- 125 ml Garlic ‘Mayo’
- 1 teaspoon apple cider vinegar
- ½ lemon, juiced (about 1 tablespoon)
- 2 teaspoons ground turmeric
- 1 teaspoon ground ginger
- ¼ teaspoon sea salt
- 450 g shredded chicken breast meat
- 40 g chopped red onion
- 45 g raisins
- 2 tablespoons chopped flat-leaf parsley, for garnish
How to Make It
- Soften the mayo in a warm water bath until it is a liquid.
- Combine the mayo, vinegar, lemon juice, turmeric, ginger and salt in a large bowl and whisk to combine.
- Add the chicken breast, red onion and raisins. Stir to combine. Serve garnished with chopped parsley.
