Curried chicken salad recipe

Ingredients

  • 125 ml Garlic ‘Mayo’
  • 1 teaspoon apple cider vinegar
  • ½ lemon, juiced (about 1 tablespoon)
  • 2 teaspoons ground turmeric
  • 1 teaspoon ground ginger
  • ¼ teaspoon sea salt
  • 450 g shredded chicken breast meat
  • 40 g chopped red onion
  • 45 g raisins
  • 2 tablespoons chopped flat-leaf parsley, for garnish
How to Make It
  1. Soften the mayo in a warm water bath until it is a liquid.
  2. Combine the mayo, vinegar, lemon juice, turmeric, ginger and salt in a large bowl and whisk to combine.
  3. Add the chicken breast, red onion and raisins. Stir to combine. Serve garnished with chopped parsley.
