Ingredients
- ¼ cup (60 ml) vegetable oil
- ¼ cup (60 ml) rice milk, safe milk alternative, or water
- 0.33 cup (135 g) superfine sugar
- 1 tablespoon (15 ml) vanilla extract
- 3 ripe bananas, sliced
- 1½ cups (185 g) Bob’s Red Mill white rice flour
- ½ cup (60 g) Bob’s Red Mill tapioca flour
- 2 teaspoons (9.2 g) baking powder
- 1 cup (175 g) Enjoy Life semi-sweet chocolate chips
How to Make It
- Preheat oven to 350°F (180°C, or gas mark 4).
- In a food processor purée the oil, milk, sugar, vanilla, and bananas until smooth. Add the flours and baking powder and pulse until the dough is smooth. Stir in the chocolate chips.
- Pour batter into a greased 9 x 13-inch (23 x 33-cm) pan.
- Bake for about 30 minutes, or until golden around the edges and soft in the center. Let cool in the pan. Top with additional chocolate chips if desired. Cut into bars or squares.
