Chocolate coconut energy bites recipe

These little energy balls are a great pick-me-up as they’re full of essential minerals and vitamins. They also freeze well for up to 3 months, so I recommend making a huge batch.

Ingredients

  • 9 oz/1½ cups (250 g) soft Medjool dates, stoned (pitted) and chopped
  • 2 oz/scant ¾ cup (60 g) shredded unsweetened coconut
  • 2 oz/½ cup (60 g) chopped walnuts
  • 2 tbsp peanut or almond butter
  • 2 tbsp unsweetened cocoa powder
  • 1 tbsp chia or flax seeds
  • 1 tbsp coconut oil
  • a pinch of sea salt
How to Make It
  1. Put the dates in a food processor and blitz until you have a sticky paste.
  2. Add half of the shredded coconut together with the walnuts, nut butter, cocoa powder, seeds, coconut oil and salt. Blitz again until everything is well combined, adding 1–2 tablespoons cold water to moisten the mixture if it’s too dry.
  3. Take small pieces of the mixture and shape each one into a small ball (approximately 2 cm/1 in diameter) you should get 18 balls in total then roll them in the remaining coconut. Place on a baking tray (cookie sheet) lined with parchment paper and chill in the fridge for at least 30 minutes to firm up.
  4. Store the balls in an airtight container in the fridge for up to 7 days, or in the freezer for up to 3 months (defrost at room temperature before eating).
