Tomato stew is the most common go-to stew across Africa. It is a simple tomato stew commonly served with cooked rice, and usually filled with a variation of meats but this recipe replaces that with chickpea.
Ingredients
- 1 cup canned/tinned chickpea
- 1 tablespoon tomato paste
- 1 cu p tinned plum tomatoes
- 1 teaspoon dried mixed herbs
- 1 teaspoon curry powder
- ¼ cup vegetable oil
- 2 teaspoons seasoning powder of choice or equivalent
- 1 medium onion (chopped)
- 1 small scotch bonnet pepper
How to Make It
- Add tomatoes and pepper to a blender and blend together.
- Place a pot on medium heat and add vegetable oil.
- Add chopped onions, curry and dried mixed herbs and fry for 2 minutes.
- Add chickpeas and fry for 2 more minutes.
- Add tomato paste and seasoning powder and fry for 3 minutes.
- Add blended plum tomatoes and mix together with a wooden spoon.
- Place lid on top of the pot and leave to cook for approx. 10 -15 minutes.
- Serve with cooked white rice.
