A light and healthy recipe, these neat little patties make a lovely simple snack that can be served as an appetizer, canapé or even a light lunch. Team them with any fresh salad ingredients to vary things, or add a few french fries or buttered new potatoes to make a more substantial meal.
Ingredients
For the Chicken & Scallion Patties
- 14 ounces ground chicken
- 4 scallions, finely chopped
- 1 tablespoon light soy sauce
- 2 tablespoons chopped cilantro leaves
- 1 tablespoon sesame oil
- 1 garlic clove, finely chopped
- 1 teaspoon Worcestershire sauce
- 2 tablespoons peeled and grated ginger root
- 2 tablespoons sesame seeds
- 1 red chili, seeded and finely chopped
- 2 tablespoons olive oil, for frying
- 1 teaspoon sesame oil, for frying
For the Onion, Tomato & Cilantro Salad
- 2 red onions, thinly sliced
- 2 tablespoons chopped cilantro leaves
- 3 vine tomatoes, finely chopped
- Sea salt and freshly ground black pepper
- A drizzle of Bean House Salad Dressing
How to Make It
- Mix together all the ingredients for the patties, cover with plastic wrap and chill 30 minutes in the refrigerator.
- Shape the chicken mixture into 8 small burgers. Heat the frying oils in a skillet until shimmering, then add the patties and fry 2 minutes on each side until cooked through and golden. Drain on paper towels.
- Meanwhile, mix together the salad ingredients, adding a little dressing to taste. Serve the patties with the fresh onion, tomato and herb salad.
