Ingredients
- 2 large eggs
- 1 teaspoon chia seeds
- Sea salt and ground black pepper, to taste
- ¾ teaspoon olive oil
- 1 small handful baby spinach leaves
- ½ medium tomato, diced
- 20 g reduced-fat cheddar cheese, grated
- 2 slices wholemeal bread
How to Make It
- Whisk the eggs, chia seeds, salt and pepper together in a small bowl.
- Heat the oil in a non-stick frying pan over medium heat. Pour in the egg mixture and swirl to cover the base of the pan. Cook for 1–2 minutes or until the egg starts to set and the underside is golden in colour. Reduce the heat to medium–low.
- Sprinkle the spinach, tomato and cheese over the omelette. Cook for 1 minute or until the egg is set. Fold in half to cover the filling and transfer to a plate.
- Toast the bread to your liking. Serve the omelette with the toast.
