I don’t think I need to explain anything about this recipe except to say, in my best Nigella voice: “Bread, butter, cheese… what could be more perfect?” It will be a surprise to no one that Nadia came up with this on a morning after the night before. Boy, did she feel better afterwards!
Ingredients
- 8 slices of generously buttered bread
- 7 oz (200 g) of your favourite cheese, grated
For the custard
- 1 pint (570 ml) whole milk
- 3 eggs, lightly beaten
- 3½ oz (100 g) mature Cheddar cheese, grated
- 4 tbsp grated Parmesan cheese
- bunch of chives, chopped
- 10 cherry tomatoes, halved
How to Make It
- Make 4 sandwiches filled with cheese and cut each into 4 triangle-shaped quarters.
- Arrange them all in a baking dish, with the pointy bits standing up.
- Now make the custard. Put the milk, eggs, cheeses, and chives in a jug, give it a good stir, then pour it over the sandwiches. Allow to sit for 30 minutes for the bread to absorb the custard.
- Meanwhile, preheat the oven to 200°C (400°F/Gas 6). Pop the dish in the oven and cook for 30 minutes, or until the pud is lightly golden.
- Sprinkle with the cherry tomatoes and serve with a large green salad.
