- 1¼ pounds pork tenderloin

How to Make It
- Combine the mango, scallions, lime juice, red pepper, 1 tablespoon of the oil, and ¼ teaspoon salt.
- Rub the pork with the remaining 1 teaspoon of oil; season with the coriander and ½ teaspoon salt.
