Ingredients
For the Salad
- 1 head romaine lettuce or 3 romaine hearts
- 1 tomato
- 1⁄2 red onion
For the Dressing
- 1 small garlic clove
- 1 celery stick
- 2 tbsp cold-pressed olive oil
- 1 tbsp pumpkin seeds
- 2 tsp lemon juice
- 1 tsp tamari
- 1 tsp white-miso paste
- 1 tsp balsamic vinegar
How to Make It
- Tear the lettuce leaves into large pieces. Remove the tomato stem, and cut the tomato into eight pieces. Peel the onion and slice it into thin strips.
- To make the dressing, peel the garlic. Cut the celery into pieces. Place all the ingredients for the dressing into a blender. Purée on the highest setting for 2–3 minutes to a make a creamy dressing.
- Put the romaine lettuce, tomato, and onion in a large bowl, add the salad dressing, and toss well to combine. Serve in small bowls or plates.
