Ingredients
- 9 ounces flour
- 1 ounce fresh yeast
- 2 ounces butter or lard
- ½ cup stock or milk
- Salt
- Vegetable oil
How to Make It
- Dissolve the yeast in warm stock or milk. Mound the flour, and make a well in the centre. Pour the yeast into the well. Add the butter and a pinch of salt, and work the mixture to form a smooth, even dough.
- Place the dough in a bowl and set aside to rise for about 1 hour.
- Divide the dough into small pieces, and fry in abundant hot oil until golden. Remove from the oil and drain on paper towels. Serve warm, sprinkled with salt.
- To save time, substitute the fresh yeast cake with an envelope of active dry yeast. The dough will be ready for frying immediately.
