Brazil nut lucuma caramel recipe

Ingredients

  • 1 cup raw honey, crystallized
  • ⅓ cup coconut butter
  • ¼ cup lucuma powder
  • 1 tablespoon maca powder
  • ¼ teaspoon Himalayan salt
  • 1 teaspoon vanilla bean powder
  • ½ cup Brazil nuts, chopped
How to Make It
  1. In a food processor, mix all ingredients, except the Brazil nuts. The dough should ball up and become caramel-like.
  2. Remove the mixture from the food processor, and place in a glass bowl.
  3. Add the Brazil nuts and stir in by hand until evenly combined.
  4. Press the mixture between two sheets of parchment paper into a ½-inch-thick caramel, using a straight-sided glass or a rolling pin to evenly distribute the caramel.
  5. Chill for 1 hour or longer on a cutting board, then cut into small, bite-sized pieces. Keep chilled until ready to serve. Store chilled.
