A flavorful and moist snack bar. You may serve with or without the icing.
Ingredients
For Bars
- 1½ cups (355 ml) orange juice (or 1 cup [235 ml] water and ½ cup [120 ml] orange juice concentrate)
- 1 cup (200 g) sugar
- ¼ cup (60 ml) vegetable oil
- 1 teaspoon (5 ml) vanilla
- 3 cups (375 g) Bob’s Red Mill white rice flour
- 1 tablespoon (13.8 g) baking powder
- ½ 2 teaspoon (3 g) salt
- 1½ cups (218 g) fresh or frozen blueberries
For Icing (optional)
- 1 cup (120 g) powdered sugar
- 2 teaspoons (10 ml) orange juice
How to Make It
- Preheat oven to 350°F (180°C, or gas mark 4). To make the bars
- In a large bowl, combine orange juice and next 6 ingredients (through salt) and mix until smooth. Stir in blueberries.
- Pour batter into a greased 9 x 13-inch (23 x 33-cm) baking pan.
- Bake for about 40 minutes, or until the center cracks. Let cool. To make the icing
- Stir together the powdered sugar and orange juice. Pour icing over cooled cake. Cut into bars. Sprinkle with lemon zest if desired.
