Ingredients
- 4 cups grated raw beets
- 2 cups pea shoots
- 2 pears, cored and chopped
- ½ cup raw pumpkin seeds
- 1 Tbsp poppy seeds
Dressing
- ¼ cup organic lemon juice
- ¼ cup extra virgin olive oil
- 1 Tbsp freshly grated ginger
- ½ tsp pink rock or gray sea salt
How to Make It
- In a large bowl, combine all the salad ingredients.
- In a small bowl, mix together all the dressing ingredients. Pour the dressing over the salad, toss and serve.
