This region of Spain is very famous for its blue cheese. Get the Spanish kind if you can find it; otherwise, any good blue cheese will do for this delicious steak sauce.
Ingredients
- 3 tbsp olive oil
- 4 beef tenderloin steaks
- Salt and pepper to taste
- 1 diced onion
- 1 tbsp paprika
- 3 tbsp brandy
- 2/3 cup beef broth
- 5 oz blue cheese
How to Make It
- Heat the olive oil in a big skillet.
- Season the steaks with salt and pepper.
- Brown the steaks on both sides for 5 minutes each side (rare) or for desired doneness.
- Move the steaks to a platter and keep them warm.
- Sauté the onion in the same skillet for 5 minutes.
- Stir in the paprika and coat while stirring for 1 minute
- Pour in the brandy and broth and cook on high for 5 minutes, until the sauce is reduced by half.
- Stir the cheese into the sauce and let simmer for 2 minutes. Pour the sauce over the steaks.
