Beef Burgers with Sweet Potatoes and Green Beans Recipe

Ingredients

  • 2 sweet potatoes, diced, about 14 oz (400 g) in total
  • 2 tbsp olive oil
  • 1 tbsp chopped fresh thyme
  • ½ tsp salt
  • ½ tsp freshly ground black pepper
  • 14 oz (400 g) fresh green beans, trimmed
  • 1½ lb (700 g) 90% lean ground beef
  • 2 large eggs
  • 1 tbsp Dijon mustard
  • 1 tbsp onion powder
  • 1 tsp garlic powder
  • ½ cup BBQ sauce
To Serve (Optional)
  • Baby spinach or other greens
  • Sliced tomato
  • Sliced onion
How to Make It
  1. Preheat the oven to 450°F (230°C) and line a baking sheet with parchment paper or foil. In a medium bowl, toss the sweet potatoes with 1 tbsp olive oil, thyme, ¼ tsp salt, and ¼ tsp pepper. Spread the potatoes on the prepared baking sheet and bake for 25 minutes.
  2. In a pot with a steamer insert, steam the green beans for 15 minutes, or until crisp-tender. Plunge the cooked beans into a bowl of ice water, then drain.
  3. In the bowl used for the potatoes, mix together the ground beef, eggs, mustard, onion powder, garlic powder, and remaining ¼ tsp salt and ¼ tsp pepper. Using a 1⁄3-cup measure, scoop out the meat mixture and form into 8 patties.
  4. In a large, non-stick pan, heat remaining 1 tbsp olive oil over medium-high heat. Add 4 patties to the pan and cook for 3 to 4 minutes until golden brown. Flip the patties, cover with a lid, and cook for another 4 minutes or until burgers reach desired level of doneness. Repeat for the second batch of 4 patties.
  5. To assemble the meals, divide the green beans and sweet potatoes evenly among 4 containers. Add 2 burger patties to each container and top with 2 tbsp BBQ sauce and additional toppings, if using. (Note that nutrition per serving does not include greens, tomato, or onion.)
