Here’s a simple yet elegant and colorful way to assemble a special brunch for two.
Ingredients
- 4 croissants
- 4 slices of fresh papaya or cantaloupe
- 2 paper-thin slices prosciutto, each cut in half lengthwise
- ¼ lb (125 g) wedge brie cheese
- 8 fresh strawberries
- small bunch seedless grapes
- glasses freshly squeezed orange juice
- 1½ cups (375 ml) sparkling wine (optional)
- small bowl raspberry jam or other preserve
- cream and sugar
- coffee or tea
How to Make It
- Preheat the oven to 200°F (95°C). Place the croissants on a baking sheet and warm in the oven 10 minutes.
- Meanwhile, line a large serving tray with a napkin. Wrap each slice of papaya or cantaloupe with a half-slice of prosciutto and arrange on one side of a decorative plate.
- Place the cheese, strawberries and grapes on the other side of the plate. Place on the tray, along with the orange juice, sparkling wine, jam, cream and sugar.
- Add the warmed croissants in a napkin-lined basket or plate to the tray, and finish up with 2 coffee cups and a small spoon and knife.
- Serve the tray of goodies in a comfortable location, such as the bedroom, in front of the fire or on a sunny patio.
- Pour the tea or coffee. Sip some orange juice and then top up each glass, if desired, with sparkling wine.
