Red kidney bean salad with carrots and cottage cheese!

Ingredients

  • ½ pound boiled red kidney beans (water drained)
  • 3 medium carrots, julienne
  • 1 cup cottage cheese, grated
  • 1 head of lettuce, chopped
  • 2 Tbsp balsamic vinegar
  • Salt and pepper to taste
How to Make It
  1. Combine all the ingredients in a large bowl. Mix well. Serve!
