Red kidney bean salad with carrots and cottage cheese!
Ingredients
- ½ pound boiled red kidney beans (water drained)
- 3 medium carrots, julienne
- 1 cup cottage cheese, grated
- 1 head of lettuce, chopped
- 2 Tbsp balsamic vinegar
- Salt and pepper to taste
How to Make It
- Combine all the ingredients in a large bowl. Mix well. Serve!
