Ingredients
For the "Meatballs"
- 1 cup soaked hulled barley (soaked in water for 2 days)
- 1 small chopped tomato
- 1 tbsp chopped green onion
- 1 chopped garlic clove
- 1/3 cup of chopped beet-root
- 1 tbsp olive oil
- 2 tbsp vinegar
- 2 tbsp fresh basil leaves
- 1 tsp shredded ginger
- Pinch of salt
- 1 tbsp tamari
- 1 tbsp psyllium hulls
- 2 tbsp chopped celery
- ¼ cup shredded cucumber
For Zucchini Pasta

- Put all the ingredients in the food processor Shape the mixture into small balls with your hands. For the Zucchini Pasta
- Spread over a towel and sprinkle with salt to eliminate their liquids.
- Marinate with a little olive oil, herbs and tamari.
