Banana lemon cake is very light and a tasty dessert.
Ingredients
For the Dough
- 4 eggs
- 1 medium banana
- 4 oz (½ cup) Whole grain flour
- 2 tbsp Brown sugar
- 2 tbsp Liquid honey
- 2 tbsp Olive/coconut oil
- 1 tsp Baking powder
For the Topping
- 1 lemon
- 1 medium banana
How to Make It
- Grate the lemon peel and take 3–4 tsp. of peel for the dough. Squeeze juice from the lemon (you will need 2 tbsp. of the juice).
- Preheat the oven to 380°F.
- Prepare the dough. You can make it two ways: using a blender or manually.
- Way 1: Peel the banana, and place it in a blender cup. Add 2 tsp. of lemon peel and lemon juice. Add the rest of ingredients for the dough in a blender and mix.
- Way 2: Whisk eggs and honey; then add mashed banana and the rest of ingredients including lemon juice and peel. Mix well using a tablespoon.
- Prepare the tray apply oil on the surface or place a layer of wax paper at the bottom.
- Pour out the dough.
- Place the tray in the oven for 40 minutes.
- To check if the dough is ready, just poke it with a fork the pieces of the dough should not stick to the fork when you remove it. Extend the time by 5–10 minutes, if necessary.
- Remove the cake and cool it down before serving. Add sliced banana and the rest of lemon peel on the top to decorate your cake. enjoy!
