Ingredients
- 3 ripe bananas
- ½ cup (100 g) Spectrum
- Organic Shortening
- 1 cup (225 g) packed brown sugar
- ¼ cup (60 ml) rice milk
- 3 cups (240 g) certified gluten-free oats or rice flakes
- 3 tablespoons (24 g) Bob’s Red Mill
- tapioca flour
- ¼ cup (60 g) Bob’s Red Mill white rice flour
- 1½ teaspoons (7 g) baking soda
- ½ teaspoon (3 g) salt
- 1 teaspoon (5 ml) vanilla extract
- 3 (1.4-ounce, or 40-g) Enjoy Life boom CHOCO boom dark chocolate bars, chopped into 1-inch (2.5-cm) chunks
- ¼ cup (34 g) salted sunflower seed kernels or 1 cup (140 g) Enjoy Life Not Nuts! Beach Bash or Mountain Mambo trail mix
How to Make It
- Preheat oven to 350°F (180°C, or gas mark 4)
- With a mixer, cream together bananas, shortening, and brown sugar. Add in rice milk and next 6 ingredients (through vanilla) and blend until smooth. Stir in the chocolate chunks and seeds.
- Drop batter by tablespoon onto a baking sheet. Batter will look very wet.
- Bake for 15 minutes. Let cool on the baking sheet for 2 minutes, then remove with a spatula to a fl at surface to cool completely
