Ingredients
- 2 pounds cassava
- 1 tablespoon olive oil
- 1 yellow onion, chopped
- 2 cloves garlic, minced
- ½ red bell pepper, diced
- ½ yellow pepper, diced
- 3 teaspoons Cajun seasoning
- ¼ cup flaxseed meal
- 1 teaspoon arrowroot
- ½ cup walnuts, chopped
- Sea salt to taste
- ½ teaspoon freshly ground black pepper
- Olive oil for frying
- One lemon juice, for garnish
- 1 small zucchini, sliced, for garnish
- Red cabbage, shredded, for garnish
How to Make It
- Boil the cassava for 30 minutes until tender.
- In a large skillet, heat olive oil over medium heat and sauté onion and garlic until the onion is translucent.
- Add the peppers and sauté for another minute or two.
- Peel the cassava and purée in a food processor. Add onion-garlic-pepper mixture, Cajun seasoning, flaxseed meal, arrowroot, walnuts, salt, and pepper and pulse until well-mixed.
- Form the mixture into patties approximately 2 inches in diameter.
- Add another tablespoon or two of oil to the skillet and fry the bammie cakes until golden brown, approximately 2 – 3 minutes.
- Flip the cakes and brown the other side, another 2 – 3 minutes.
- Serve warm, garnished with lemon juice, zucchini slices, and shredded red cabbage.
