Ingredients
- 2 Tbsp olive oil
- 4 slices bacon cooked crisp, crumbled
- 3 large sweet potatoes
- 4 green onions, sliced, green parts only
- Salt, ground black pepper, to taste
How to Make It
- Preheat oven to 350°F.
- Coat a casserole dish with olive oil.
- Clean and remove the skin from your potatoes. Then cut into small chunks.
- Place the potatoes in the casserole dish and stir to coat with olive oil.
- Top with bacon crisps and season with pepper, salt, and onion.
- Cook in the oven for 1 hr.
