Ingredients
For the Salad
- 1 bok choy, sliced into ribbons
- Chinese cabbage or Savoy cabbage, leaves torn
- Handful of bean sprouts
- Handful of snow peas, sliced on diagonal
- Handful of watercress
- 1 medium carrot, peeled and grated
- 1 scallion, sliced on the diagonal
- Handful of fresh cilantro, chopped
For the Dressing
- 1 teaspoon palm sugar
- 1 teaspoon toasted sesame oil
- 1 teaspoon soy sauce
- ½ tablespoon Thai fish sauce
- 1 lime juice
- 1 red chile, finely sliced (optional)
- 10 cashews, coarsely chopped, and 3 teaspoons sesame seeds, toasted, for serving
How to Make It
- Assemble the salad ingredients, toss with the combined dressing ingredients, and serve topped with cashews, sesame seeds, and fresh chile, if desired.
