Ingredients
- ½ medium apple, peeled, cored and sliced
- 200 g rhubarb, trimmed and sliced
- 4 teaspoons honey
- ½ teaspoon pure vanilla extract
- ½ star anise
- 1 cardamom pod, bruised
- 100 g low-fat plain yoghurt
- 30 g natural muesli
How to Make It
- Place the apple, rhubarb, honey, vanilla, star anise and cardamom pod and ½ cup (125 ml) of water in a medium saucepan and bring to a simmer over medium heat, stirring occasionally. Reduce the heat to low and simmer for 8–10 minutes or until the rhubarb and apple are soft and the sauce has thickened.
- Remove and discard the star anise and cardamom pod and set the compote aside to cool.
- To serve, place the apple and rhubarb compote in a serving bowl and top with the yoghurt and muesli.
