Apple & rhubarb compote with muesli recipe

Ingredients

  • ½ medium apple, peeled, cored and sliced
  • 200 g rhubarb, trimmed and sliced
  • 4 teaspoons honey
  • ½ teaspoon pure vanilla extract
  • ½ star anise
  • 1 cardamom pod, bruised
  • 100 g low-fat plain yoghurt
  • 30 g natural muesli
How to Make It
  1. Place the apple, rhubarb, honey, vanilla, star anise and cardamom pod and ½ cup (125 ml) of water in a medium saucepan and bring to a simmer over medium heat, stirring occasionally. Reduce the heat to low and simmer for 8–10 minutes or until the rhubarb and apple are soft and the sauce has thickened.
  2. Remove and discard the star anise and cardamom pod and set the compote aside to cool.
  3. To serve, place the apple and rhubarb compote in a serving bowl and top with the yoghurt and muesli.
