Ingredients
- 2 cups apples peeled, cored and diced (or sliced)
- 1 tablespoon brown sugar
- 1 tablespoon ground cinnamon
- 3 cups all-purpose gluten-free flour
- 3 teaspoons baking powder
- ½ teaspoon salt
- 2 cups white sugar
- 1 cup vegetable oil
- ¼ cup orange juice
- 3 teaspoons vanilla extract
- 4 eggs, room temperature
- ¼ cup confectioners’ sugar for dusting
How to Make It
- Preheat the oven to 350 degrees F.
- Grease a 10” Bundt pan with butter or margarine.
- In a medium mixing bowl, combine together the diced apples, brown sugar and, cinnamon; toss and set aside.
- In a separate mixing bowl, sift together the flour, baking powder, and salt; set aside.
- In a large bowl, combine the white sugar, oil, orange juice, vanilla, and eggs. Beat on high until smooth. Add the flour mixture and blend ingredients together.
- Pour half of the batter into the Bundt pan. Add the apple mixture and top with the remaining batter.
- Bake for 50 minutes, or until a toothpick comes out dry. If not ready, cook an additional 5-10 minutes.
- Remove from oven and let cool in pan for 15 minutes.
- Turn it out onto a wire rack and let cool completely. Decorate with confectioner’s sugar.
- Delicious served warm with ice cream!
