Ingredients
- 1⁄2 cup extra-virgin olive oil
- 3 cloves garlic, crushed
- 2 tablespoons mild red pepper flakes without seeds (such as Turkish marash or Korean hot pepper)
- 1⁄2 cup strong Cider Vinegar (at least 6% acidity)
- 1 teaspoon salt
How to Make It
- Heat the olive oil in a small pan over medium heat until it is on the verge of smoking.
- Add the garlic and pepper flakes and stir. Cook until the garlic begins to turn golden, about 1 minute, then add the vinegar and turn off the heat. Take care not to overbrown the garlic or the sauce will taste like a garlic bagel (though worse things could happen).
- Stir in the salt and use the sauce while it is still warm.
