Ingredients
- 1 pound flour
- 4 cloves garlic
- Olive oil
- Salt and freshly ground pepper
- Grated pecorino
How to Make It
- Mix the flour with water and a pinch of salt. Knead into a smooth, even bread-like dough.
- On a lightly floured surface, roll out the dough into a thin sheet and cut into strips.
- Roll the strips into thick spaghetti and set aside.
- In a skillet, warm 6 tablespoons of olive oil. Add the garlic, and cook briefly.
- Cook the pasta in boiling salted water until al dente. Drain, and add to the skillet with the garlic. Sprinkle with pecorino, season with pepper, and toss.
- The pasta can also be served with a simple meat sauce, duck ragù or a sauce made with onions, pancetta and tomatoes
