Ingredients
- ¼ cup mayonnaise
- ½ lemon juice
- 2 to 3 tablespoons sour cream or plain yogurt
- 2 tablespoons thinly sliced green onions
- 1½ teaspoons light brown sugar
- 2 teaspoons minced fresh dill, plus more to taste
- ¼ teaspoon kosher salt, plus more to taste
- ¼ teaspoon garlic powder
- ⅛ teaspoon black pepper, plus more to taste
- 1 cup chopped celery
- 1 cup halved red grapes
- ¼ cup cashews, chopped, or slivered almonds
- 3 cups chopped cooked chicken
- 8 ciabatta or croissant rolls
- Green-leaf lettuce, for garnish
How to Make It
- In a large bowl, stir together the mayonnaise, lemon juice, and sour cream. Stir in the green onions, brown sugar, dill, salt, garlic powder, and pepper until combined.
- Stir in the celery, grapes, and cashews until evenly coated. Finally, stir in the chicken. Refrigerate for at least 15 minutes before serving. Taste and add more dill, salt, and pepper, if needed.
- Serve the mixture on the rolls and top with fresh lettuce.
